Cardamom Spiced Cookies
Netflix just made all 7 seasons of the Good Witch available to stream, and since it’s October, I thought what better way to get into the spirit of the season than some Cardamom Spiced Cookies. I first heard of these cookies on an episode of Good Witch, and if they’re powerful enough to make two people fall in love, than I knew I had to try them. And let me just say – THEY DO NOT DISAPPOINT. I feel more like Cassie Nightingale already. These cookies make the perfect pair to any Fall gathering, a delicious treat on Halloween night, or a yummy breakfast cookie to dip into your coffee.
I had never heard of Cardamom Spiced Cookies before so I wasn’t entirely sure where to start with this recipe. My first attempt ended up tasting like a Chai-scented Christmas candle and I knew that I was no where near close to Cassie’s beloved cookies. So I went back to what I know- Gingerbread Cookies. I took an old gingerbread cookie recipe of mine (coming this Christmas) and stripped it down, tweaked a few ingredients, and added the magic touch- Cardamom. Then BAM! A cookie familiar enough to make you want to try, but magically different enough to make you stand in the kitchen eating them before they’re even cooled.
The key
These cookies have THE BEST texture. Think soft in the center, with beautifully golden edges, and that drool-worthy Fall flavor. That’s why using VERY soft butter is key to getting these cookies ooey-gooey with just the right amount of crunch. Don’t melt the butter because it’ll just make a big mess and your dough wont hold together well. Too cold of butter wont give you that soft, smooth dough. I suggest leaving your butter to sit on the counter for several hours before making these. Trust me- it’ll be worth it.
Cardamom Spiced Cookies
- 2 1/2 cups all-purpose flour
- 1/4 tsp salt
- 1 1/2 tsp ground cardamom, more for dusting
- 1 1/2 tsp ground cinnamon
- 1 1/2 tsp ground ginger
- 1/4 tsp ground cloves
- 2 tsp baking soda
- 6 tbsp vegetable oil
- 6 tbsp soften butter
- 1 cup granulated sugar
- 1/4 cup molasses
- 1 large egg
- Preheat the oven to 350° F. Line a baking sheet with parchment paper.
- Combine flour, baking soda, cardamom, ginger, cinnamon, and salt in a medium bowl and set aside. Whisk oil, butter, and sugar in a large mixing bowl. Add molasses and egg. Slowly stir in dry ingredients.
- Roll the dough into 2-tablespoon sized balls and set cookies about 2 inches apart on prepared cookie sheet.
- Bake on upper rack for about 10-12 minutes, or until the cookies are golden brown and starting to crack.
- Remove from oven and immediately sprinkle a little cardamom over each cookie.
- Allow cookies to cool for about 10 minutes before transferring to a wire rack to cool.
Make these cookies this weekend and curl up on the couch with your favorite blanket, a hot cup of tea or coffee, and stream all seven seasons of Good Witch on Netflix, and all 13 movies on Hallmark Movies Now.
